Il avait pass\u00e9 la commande au chef, car ce coquillage est rare, et donc co\u00fbteux, il est p\u00each\u00e9 \u00e0 pied ou en plong\u00e9e, il demande une pr\u00e9paration sp\u00e9ciale, la chair, tr\u00e8s ferme, doit \u00eatre attendrie, par trempage dans du lait, et\/ou, de mani\u00e8re plus radicale,  \u00e0 coups de marteau. Par bonheur le chef a pu nous satisfaire.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Le plat fut d\u00e9licieux. L&rsquo;autre nom de l&rsquo;ormeau est <em>haliotide<\/em> qui veut dire <em>oreille de la mer<\/em>. Qu&rsquo;ont-elles entendu<em> <\/em>ces oreilles nacr\u00e9es, en se promenant au fond de la mer entre chaque repos sur leurs rochers ?
